Pear and Arugla Salad

 This salad is one of my favorites. It’s the dressing that makes it. Feel free to add more or less of the salad ingredients.   

For the salad:

2 pears, sliced thin or dice into 1/2 inch cubes

4 green onion, white part only, finely chopped

6 slices bacon, fully cooked and crumbled

1/4 cup pomegranate seeds

1/4 cup pistachios 

4 basil leaves, chiffonade

1/4 cup goat cheese crumbled

4 cups arugula 

Toss salad ingredients with the dressing right before serving  

Dressing:

4 tablespoons good apricot preserves

1 tablespoon Dijon mustard

3 tablespoons apple cider vinegar

1/3 cup avocado oil

1/4 red pepper flakes (if you like heat)

Salt and pepper to taste

Warm the apricot preserves in the microwave in a wide mouth mason jar  Add the remaining ingredients  place a lid on the jar and shake to combine  


Serves 4
