Raspberry Ice Cream


Dear Claire and Eden,

When I was living bio in Heber, my eighbor Elyse had a yard lined with hundreds of raspberry bushes.  When her bushes were out of control over there, I was the beneficiary of the excess bounty.  Ice cream is one of the ways I LOVE putting the fresh raspberries to good use. I always make a triple batch to share with Elyse as a thank you.  I warn you, this stuff is addicting.  I look forward to making it every year.

This recipe makes enough ice cream for 2 1/2 to 3 quarts.  If you have a small ice cream machine like a Cuisine Art, you will need to process in two batches (or cut the recipe in half).


3 1/2 cups fresh raspberries, (keep 1/2 cup to keep in reserve)
2 cups sugar
2 cups heavy cream
1 cup ½ and ½
1 cup whole milk
2 eggs
½ teaspoon vanilla
¼ teaspoon salt

In a small saucepan over medium heat, combine the 3 cups fruit and the sugar.  Stir over medium heat until the fruit and sugar break down and form a jam.  It takes about 5 – 7 minutes.  Remove from heat and let the fruit mixture completely cool in the refrigerator.

When ready to make ice cream, remove the jam from the refrigerator.  In a large mixing bowl, add the eggs, milk, creams, salt and vanilla.  Whisk to combine.  Add the jam and continue whisking until the ingredients are incorporated.

Pour half of the ice cream mixture into your ice cream freezer leaving about 3 inches head space so it does not overflow as the ice cream churns.  Process for about 60 minutes.  Add the reserved ½ fruit and process for a few minutes more. 

Remove ice cream from the machine and place into containers.  I usually freeze mine for about 20 minutes before serving just to give it some time to set.

P.S. If you are looking for an amazing ice cream maker that does not require salt, or a freezer bowl insert, check this one out.  I have owned this machine for years and LOVE it.  I especially like that a drum is taking up space in my freezer and that I can make a double batch back to back.  



If you are on a budget, this model is also good, but it has a freezer bowl. This is my favorite thing to give family members who are getting married. Cuz you know, ice cream . . .
