Parmesan Crusted Chicken
My own recipe. Super simple to make, something kids will eat without throwing a hissy-fit.
4 chicken thighs skin removed.
1/2 cup Best Foods or Hellmanns mayonnaise
1/4 cup grated parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon ground black pepper
1/4 cup pecans, chopped fine (optional)
1/2 cup Ritz crackers finely crushed
Preheat the oven to 425 degrees.
Line a baking sheet with foil.
In a small mixing bowl, combine the mayonnaise, and parmesan cheese.
Spread evenly over each piece of chicken.
Place the dressing, nuts and cracker crumbs in a small bowl, and whisk to combine.
Dredge each piece of chicken in the cracker crumb mixture, and place on the baking sheet.
If you have leftover cracker mixture, sprinkle it over the top of each piece of chicken.
Bake for 20 - 30 minutes until chicken is cooked through.
Serves 4.
