Waffle Cones for Ice Cream



My favorite part  about eating ice cream is the cone.  Seriously, it really is.   The best, best part is the very last bite, with the bottom of the cone full of ice cream.  If I don't get that part, I feel denied.  And if you have kids, sometimes that happens.  


Waffle cones are super easy to make.  But, you need a waffle cone maker.  There are all sorts of brands.  Some are expensive, and some are not.  I really like the Best Chefs model  because it comes with the cone shaper so you have everything you need in one purchase.   


This is the recipe I use.  Love. It.  It makes about 12 medium size cones.  I don't fill the waffle maker up all the way because if you do, the cone is just way too huge.  One person (Matt) ends up eating half the ice cream before anyone else even gets a bite.  So not fair.   Just thought I would warn you about that.   If you use about 1/4 cup measuring spoon or ladle, the cone will hold about two scoops of ice cream, which is just right.

2 eggs
2 egg whites
1/2 tsp salt
1 cup brown sugar
1 1/3 cups sifted all purpose flour
4 tablespoons melted butter, slightly cooled
1/2 teaspoon vanilla

Set the temperature of the cone maker to 2 1/2.

In a medium mixing bowl, whisk all of the ingredients together.  
Pour 1/4 cup of batter into the cone maker.
Put the lid one the cone maker and wait for about 1 minute.
Check the waffle, it should be a light golden brown color.  If not, put the lid back on and give it a few more seconds.
Gently remove the waffle from the cone maker with a fork.

Using a cone shaper.
Lay the waffle on a clean kitchen towel.
Lay the cone shaper on top of the waffle and gently roll the waffle around the cone shape.
Pinch the end of the cone to seal.
Let cool before removing the shaper.


Or . . . you can make a waffle cup.

Remove the waffle from the cone maker with a fork.
Place the waffle over an inverted glass and cover with a dish towel.  
Using your hands, gently shape the waffle around the glass to form a cup.  
Let cool before removing.

Makes about 12 cones or cups.

Yum!! I may have to get one of those waffle cone makers myself. By the way, did you decide against the gluten-free diet?

Fortunately, my tests came back negative, so I don't have to live on a restricted diet . . . . unless I'm dieting :)
