Fast and Easy Red Velvet Cupcakes with Cream Cheese Frosting
I make this version of Red Velvet Cake when I am in a hurry. Everyone loves it. Sadly, I think they love it more than the homemade recipe of my grandmothers.
1 box red velvet cake mix (If you can't find it, use a Devil's food cake mix and a small bottle of red food coloring)
3 eggs
1 1/2 cups buttermilk
1/3 cup oil
1 cup chocolate chips
Preheat the oven according to the directions on the box.
Place all of the above ingredients, except for the chocolate chips, in a large mixing bowl. Using an electric mixer, beat the ingredients on medium speed for 2 minutes. Fold in the chocolate chips. Pour batter into prepared cake pans or cup cake tins and bake according to the directions on the box.
Cream cheese frosting:
4 ounces cream cheese (1/2 of an 8 oz. package)
4 tablespoons butter (1/2 stick)
1 teaspoon vanilla
3 cups powdered sugar
1 tablespoon milk
1/4 teaspoon salt
1/4 teaspoon salt
Blend the above ingredients for 4 minutes on medium speed until creamy.
