Stuffed Pork Chops
My own recipe. One of my family's favorite Sunday Dinners. We are serving these at a church function this week. I'll let you know how it goes.
8 thinly sliced loin pork chops (I buy the thin chops at Super Walmart.)
Salt and pepper
1 box Stove-top Stuffing (Cornbread mix)
1 Granny Smith apple, peeled and chopped into ½ inch cubes
3/4 cup mayonnaise
3/4 cup Gulden’s Stone Ground Mustard
1 1/2 teaspoons Worcestershire sauce
1 1/2 tablespoons soy sauce
3 tablespoons brown sugar
Make the stuffing according to the directions on the box. Add the chopped apple, stir to combine and set aside.
Place a little olive oil in a large skillet over medium high heat. Add the pork chops and brown on both sides. Remove from pan. Sprinkle both sides with salt and pepper.
Place a scoop of the stuffing mixture on top of each chop. Fold each chop in half, and secure with a tooth pick. (For larger portions, you can use one chop on the bottom, a scoop of stuffing, and another chop on top. Secure with toothpicks & remove them before serving.)
Place the chops in a baking dish.
In a small bowl, combine remaining ingredients. Spread over pork chops.
Bake at 350 degrees for 20 minutes. Make sure you remove the tooth picks before serving.
Notes:
This is the inexpensive/easy method. If you want to make it fancy, make your own stuffing instead of Stove Top.
You can also make this dish with chicken. Pound the chicken with a mallet, place ½ cup stuffing on top. Fold chicken in half over the stuffing so it looks like a sandwich. Cover and secure with tooth picks.
