Peppermint Ice Cream
When I was a little girl, my all time favorite thing was to go with my grandparents to Fernwoods Ice Cream Parlor in Salt Lake City, Utah where they would treat me to an ice cream cone. But it had to be Fernwoods. Nothing else would do. Why???? Because they had the BEST pink peppermint ice cream in the world. In the world I tell you!!!!! When Fernwoods closed it's doors in the 1990's I was in big trouble... I could not longer get peppermint ice cream!!!! So... I had to resort to making up my own recipe... and it comes close.... real close. Give it a try and see what you think.
Note:
This recipe makes enough ice cream for 2 ½ to 3 quarts. If you have a small ice cream machine like a Cuisine
Art, you will need to process in two batches (or cut the recipe in half to make
1 batch).
1 package
Brach’s starlight peppermint candies (or candy canes)
2 cups
heavy cream
1 cup
whole milk
1 cup
half and half
2 eggs
1
teaspoon vanilla
1/4 tsp
salt
Directions:
Crush the
peppermint candies in a food processor or a blender.
Whisk the
remaining ingredients together, then add the crushed candy.
Pour the
mixture into your ice cream machine making sure you leave about 3 inches headroom so
that the machine will not overflow as the ice cream churns. Process for about 50 minutes if using an electric
machine. (I check it at 45 minutes.)
Once firm
place in containers and freeze.
