Nana's Onion Rice
This is my grandmother's recipe. When I was a little girl, we spent every Sunday with my grandparents. And every Sunday, without fail, my grandma (whom we called Nana) served this rice. Every Sunday. I was glad, because I was a picky eater, and I loved this!
4 Tbsp. butter
1 large onion, chopped fine
2 cups long grain white rice
2 cans Campbell’s French Onion Soup (not dry mix)
2 cups water
2 cups mushrooms, sliced
Melt butter in pan. Add onion and mushroom and saute until tender (about 3 minutes). Add rice, soup and water. Stir. Cover with lid and reduce heat to low. Simmer on stove approx. 20 minutes until done.
Serves 8.
